Protein Spinach Muffins

  • 2 ripe bananas the mushier the better

  • 6 eggs

  • 1 scoop of protein powder ( I used pb chocolate truvani)

  • 1/2 cup peanut butter (or whatever nut butter you like)

  • 1 cup honey

  • 2 cups of spinach

  • 1.5 cups of oats (if you are gluten free make sure they’re gluten free but most are)

  • 2 tsp baking powder

  • 2 tsp cinnamon

  • 1 teaspoon salt

  • chocolate chips (make sure your batter isn’t hot from the blender or they will all melt)

*blend all ingredients except chocolate chips

*once blended stir in your chocolate chips (measure with your heart)

*pur batter into cupcake/muffin tins

*bake on 350 for 15-20 minutes depending on oven. this recipe makes 24ish mini muffins and a couple regular size or 12-20 fuill size muffins depending on how much you fill your tin. Store in fridge but I doubt you will have leftovers.
